
So yesterday morning I made pancakes for my fiancĂ© and my self. I have been craving pancakes for months and have not had the opportunity to make them. Saturday we had time. Pancakes seem like a simple culinary undertaking but when it’s been a long time since you have made them you need a little refresher. I used to make them all the time when I was a kid but now I could not even remember what all goes into pancakes let alone the ratios!

This site is a great place to start from. There are recipes foe every and any thing you can think of and if you are like me you don’t follow the recipe as gospel but rather use it as a guide and improvise. I digress, the pancakes turned out great. I added a few blueberries to hers and some chocolate chips to mine. The problem for me, aside from not being very good at splitting already small recipes, is when you try to pour pancake batter out of a bowl that has toppings in it they pool in the middle. Our cakes were a little uneven!
The one lesson to pass along here is that splitting a recipe is tough and pancakes cook a lot bigger than you think!
Here is the base recipe I used for the pancakes, try it out but remember add the toppings after you pour the batter into the pan, and a little goes a long way!
Ingredients
• 1 1/2 cups all-purpose flour
• 3 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1 tablespoon white sugar
• 1 1/4 cups milk
• 1 egg
• 3 tablespoons butter, melted
Directions
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

By the way if you notice the picture of our pancakes…mine is the size of a dinner plate! My finance thought this was so funny she took this picture and sent it to our parents…..
